This is because it is a highly abrasive tool, helping maintain the softer metal blades of Western kitchen knives by aggressively shaving away micro-amounts of steel rather than just pushing the edge back into alignment like a traditional steel. This sharpener works exceptionally fast to restore a razor-sharp, 15-to-20-degree angle on dull blades.
Not recommended to be used for sharpening Japanese knives because the harsh, aggressively abrasive nature of a diamond rod can easily chip or crack the stiff, thin, delicate edge of your Japanese knives.
