This Global Ceramic Water Sharpener consists of two ceramic wheels. No.1, white, is coarse, and No.2, pink, is fine for a complete sharpening process.
Due to the sharpening groove not being parallel, the oblique angle of the ceramic wheel can restore the razor-sharpness of the knife. This ceramic water sharpener has been tested and approved by CATRA, the foremost authority on knife sharpening techniques, based in Sheffield, England.
These sharpeners are very easy to use. Simply fill with water and pull the knives back and forth through the wheel, applying light pressure.
The number of strokes required will depend on the condition of the knife, but, it is recommended to perform 7-8 strokes on each wheel. If more is required, repeat in increments of 7-8 strokes on each wheel until your knife is sharp enough.
You can use the Global Ceramic Knife Sharpener on other brands of knives, as long as the angle of the blade is also 15 degrees and they are not too thick (alternative Japanese knives tend to match this more than European knives).
